Rack n Roll


Not forgetting the production side of things at the brewery, we have just racked more of our Pride & Joy - The Tremendous Pale Ale đŸ»


Our brewers Will and Dan have racked 5,000 litres of cask pale ale into 40 litre casks this week. At this stage the main fermentation of the beer is now complete. Once it is in a cask, the more gentle process of “secondary fermentation” takes place.


In the cask, beer will “maturate” – the remaining yeast in suspension will eat up remaining sugars – producing Carbon Dioxide - this gives the cask beer a natural and gentle carbonation.


Cask conditioning and Maturation will take place in our coldstore until the beer in transferred to a pub cellar.
